Watermelon and mint go together like Forest Gump and chocolate. They were made for each other.

The cool, sweet herbaceousness of the mint adds some much needed flavor to incredibly refreshing – but relatively bland – watermelon.

This recipe calls for homemade mint syrup. which really allows the mint to shine. While this works perfectly well as juice, it also makes an excellent base for a cocktail.

Vodka works well for a watermelon martini, but we also recommended trying it with mezcal instead, as the smokey flavor from this Mexican spirit really rounds out the flavor.

  • 5 cups watermelon, peeled and cubed, seeds removed
