For the last few years, the Moscow mule has been having a bit of a moment. The drink was originally created in 1941 when an enterprising bartender who had ordered too much ginger beer decided to mix it with vodka – another drink that was hard to sell back then – and the result was a drink that he couldn’t keep in stock.
The mix of spicy ginger beer and vodka is one of the easiest and most refreshing cocktails you can make. But with a little more effort you can take this simple drink to the next level.
Via Karley Gomez of A Simple Pantry, here’s one of our favorite ways to the make the mule even more refreshing – with pineapple and cilantro. Just make sure to drink it out of its iconic copper mug.

- 2 cups vodka
- 3 cups pineapple Juice
- 4 cups ginger beer
- 3 cups chopped pineapple
- 1 cup chopped cilantro
- 1 lime
- 1 In a pitcher, add the chopped pineapple and cilantro.
- 2 Cut the lime in half and squeeze it into the pitcher, then drop the lime rinds into the pitcher.
- 3 Slowly stir in the pineapple juice, followed by the ginger beer and vodka.
- 4 Pour over ice into copper mugs and enjoy!
