The Bellini is to mimosa what a craft beer is to a Bug Light. The classic Italian breakfast drink is a prettier, tastier and – generally fresher – alternative to the ubiquitous orange juice and champagne cocktail you find at bottomless brunches across America.
Generally consisted of puréed wine-marinated peaches and Prosecco, this beautiful pink drink is sweet, refreshing and luxurious. This recipe takes things up a notch with Cointreau for a hint of orange flavor and extra dose of booze. And while you can always make your own peach purée, this recipe calls for Boiron Ambient to make things easier on you.
- .25 oz. Cointreau
- .75 oz. Boiron Ambient yellow peach puree
- 4 oz. prosecco
