If there’s a dish out there, chances are you’ll find a recipe for a version with bacon. Less utilized but just as effective: bacon fat. Sure, cooking with bacon fat instead of oil may be excessive. No, your cardiologist won’t like it. But dear lord will it turn your dish into a shining trophy of salty, savory deliciousness.
If you happen to be someone who has never uttered the phrase “too rich,” this bacon-fat hot chocolate is the glutinous beverage you never knew you needed. It’s rich. It’s savory. It’s salty-sweet. It’s all that is right about American excess, served in a steaming mug that, yes, should probably be garnished with bacon.
- 3 tablespoons rendered bacon fat, melted
- 1 1/2 teaspoons cornstarch
- 3 1/2 cups whole milk
- 1/2 cup cocoa powder
- 1/4 cup granulated sugar
- 3 ounces (about 1/2 cup) bittersweet chocolate chips
- 1 Whisk together the bacon fat and cornstarch in a medium heavy saucepan.
- 2 Whisk in the milk, cocoa powder, sugar, and 1/2 teaspoon salt. Bring to a simmer over high heat, whisking, then simmer 1 minute and remove from heat.
- 3 Whisk in the chocolate chips until melted.
