This apple pie overnight oatmeal makes itself while you sleep

Americans, for the most part, don’t eat breakfast all that often. Roughly half of us eat the first meal of the sporadically, and 12% skip breakfast altogether. Considering we’re living in an increasingly fast-paced world, it’s not surprising that many of us don’t have time to prepare a meal before we’re out the door for work.

This apple pie overnight oatmeal requires no cooking. It makes itself while you sleep, and stays good in the fridge for five days – so you can theoretically make yourself a batch on Sunday night and have breakfast ready to go every day through Friday.

Just dump some oats into a mason jar along with cinnamon, ginger, cloves, walnuts, currants, milk or your choice and apple sauce, let it sit overnight in the fridge and you’ve got breakfast ready when you wake up. Best of all, it’s in a mason jar, so you can take it to go if you’re rushing out the door.

Ingredients

  • 1-1/3 cups old-fashioned rolled oats
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 cup chopped walnuts
  • 1/4 cup dried currants
  • 2 cups milk, soymilk, almond milk or coconut milk
  • 1 1/3 cups unsweetened applesauce

Preparation

  • 1 Remove lids from four 12-ounce mason jars. Add ingredients in this order to each jar: 1/3 cup oats, 1/8 teaspoon cinnamon, 1/16 teaspoon ginger, 1/16 teaspoon cloves, 2 tablespoons walnuts, 1 tablespoon currants and 1/2 cup milk. Top each with 1/3 cup applesauce.
  • 2 Place lids on mason jars and refrigerate at least overnight or up to 5 days. When ready to eat, dig in with a spoon, or empty the contents of the jar into a bowl to serve.

Notes

  • 1 Though you can store them in the refrigerator for up to five days, the oats will continue to soften. If you prefer creamy oats, you'll enjoy digging into them after a couple of days.
