In India, chai time is all the time. The black tea cooked with spices, milk and (usually) plenty of sugar can be found on virtually every block with people drinking it from the moment they wake up until the moment they go to bed, no matter how hot it is outside. It’s partly because it’s so ingrained in their culture, and it’s partly that chai is just one of those drinks that’s impossibly delicious.
So how do you improve something that’s already more or less perfect? Add some liquor and boozy whipped cream on top.
This Golden Cuppa cocktail – courtesy of Pamela Wiznitzer of Seamstress NY – is chai’s answer to the Irish coffee. It calls for rum instead of whiskey, but what really makes this drink special is the whipped cream made with Irish cream.
Whether you’re at home suffering from the nor’easter or enjoying a relatively balmy day in the south, this drink will warm up your soul and delight your tastebuds.
- 1 oz. Irish cream
- 1 oz. dark rum
- 4-5 ounces boiling hot chai tea
- 6 oz. heavy cream
- 1 Add 1 oz. of Irish cream o 6 oz. of fresh heavy cream. Beat until it becomes thick and turns into whipped cream.
- 2 Heat water until boiling and steep chai or pour over bag of chai. Then add rum and top with the whipped cream.
